Michelin-starred soup kitchen by chefs Massimo Bottura and David Hertz, aiming to combat food waste by transforming surplus ingredients into 5-star meals for the homeless of Rio de Janeiro.

Built and opened in a mere 55 days, the restaurant used food surplus from the 2016 Olympic dining hall. Over a period of 40 days, 40 esteemed chefs—including luminaries such as Joan Roca, Alain Ducasse, Alejandro Peña, and Virgilio Martinez—came from all over the world to prepare a single meal for Rio's homeless, in their signature culinary style. Each meal served exemplified a fusion of excellence, sustainability, and cultural heritage on a plate.

I relocated to Rio de Janeiro to join the organizing team for the build-out and launch. I was also on the production team for the documentary film, "Table for All" (available on Apple TV).
My role entailed crafting distinct identities for each chef, aligning their culinary perspectives with the ethos of Reffatorio. Through personal interviews, shared meals, and kitchen observation, I aided the chefs in articulating their experiences and perspectives on a wide range of topics, including Nikkei cuisine, the origins of the Amanita Muscaria mushroom, the importance of the creativity station at El Bulli, why Syria's food supply chain is everyone's problem, and how chefs can help hospitals heal patients faster.
